Edmond Fallot is the last independant mustard producer in the Dijon region, and to this day keeps perpetuating a traditional production process.
In addition to a strict selection of high quality raw materials, the key to an outstanding product is the use of a stone mill to preserve all the flavours of mustard seeds. The stone mill will not heat the grains, and hence won't cook them which will make sure the flavours is kept intact.
