Azouro olive oil is made by cold pressing the olives within hours of being handpicked, and then bottled. This process must all be carried out in the district where the olives are harvested in order to maintain the strict PDO certification criteria and respect cultural traditions. Every season we create our unique blend from a selection of the finest indigenous olive varieties from this region – Verdeal, Madural & Cobrançosa.
