Description
Thelma Caerffili is named after Thelma Adams, who led the revival of Welsh artisan cheese production with her husband Gwynfor in the mid-1980s in response to the introduction of milk quotas. Today Carmarthenshire-based Caws Cenarth is run by Thelma and Gwynfor’s son Carwyn. Organic Thelmas Caerffili is a more mature version of their traditional Caerffili; it has a loose and slightly crumbly texture with a delicate lemony flavour – an essential cheeseboard pick.
Caws Cenarth have been making cheese on their farm in the valley of the river Cych in West Wales for several generations. Thelma and Gwynfor Adams spearheaded the renaissance in Welsh cheesemaking in the 1980s, and the business is now run by their son Carwyn. Cenarth now make a diverse range of superb organic cheeses, many of which have won multiple awards.
Ingredients: Organic cow's MILK, vegetarian rennet, sea salt, cultures.
